Sweet Potato Soufflé

Soft, sweet, silky, creamy, and with a hint of vegetables, so it's good for you! Take dessert to another level with this simple dish.


  • 3 lbs. sweet potatoes, cubed
  • 1 tsp. salt
  • 1 ½ cups softened butter
  • 5 large eggs
  • ½ cup flour
  • 2 cups sugar
  • ¼ tsp. cinnamon


Preheat the oven to 350 degrees F.

Boil potatoes in large pot of water over high heat until tender. Then drain and cool. Add to blender with remaining ingredients and puree. Pour into a greased 9 by 13-inch pan and bake for 1 hour or until set. Remove from oven and serve hot.
